Winnie the Pooh, Christopher Robin and this Journey

OK - so you are probably thinking "what do Winnie the Pooh and Christopher Robin have to do with a weight loss journey?"  Well, there's some great wisdom that comes from these two!  Today I ran across this great quote and thought it was so fitting for the journey.

You are BRAVER than you think.  It takes being brave to take that first step out of your comfort zone and into a new lifestyle.  It takes being brave to face the fear of failure (that for me was life long until a year ago) and choose to try again.  It takes being brave to step out into the unknown.  It takes being brave to do it over and over again, even when others aren't or are questioning why you are.  It takes being brave to do it for yourself when society says that is selfish.  It takes being BRAVE to reach out when you need help (I'm only an e-mail away).  You are BRAVER than you think!  

You are STRONGER than you seem.  You can choose the healthy option over the cookies, chips, soda or whatever is calling out to you.  You can commit to exercise and just when you think you can't do any more push yourself to do 1 or 5 or 10 more.  You do have muscles under that outer layer and with work they will grow, build and/or tone themselves up and eventually you will be able to see them.  Give yourself some credit - you are STRONGER than you seem!  Just push yourself a little and get ready to be amazed at your internal and external strength.

You are SMARTER than you believe.  If you are like me, you are smart enough to make excuses that convince yourself to do or not do something.  You are smart enough to make set the priorities in your life.  You are smart enough to know a healthy choice from an unhealthy one - and if you don't know you are smart enough to learn.  You are smart enough to reach out when you need help or accountability.  You are smart enough to set yourself up for success. You are smart enough to be honest with yourself through the process.

You are BRAVE, STRONG and SMART!  Use these to make the most of your life journey!

My new favorite soup!

Along this journey I have challenged myself to try new recipes and new foods.  Pinterest has been a go to source for finding new things.  This fall I found this recipe from Recipes that Crock and I also found my new favorite soup!

First let me tell you that I've made this soup in the crock pot and on the stove (because I just couldn't wait).  When I make this soup I make a few changes to make it a little healthier.  Here's my version of this amazing recipe!

Instead of ground beef, I use extra-lean ground turkey.  I also substitute brown rice for white rice.  The last change I make is using chicken broth instead of beef broth.  Sometimes I've used all chicken broth and other times I've used a combination of the two.  It really just depends on what I have in my pantry at the time.  The last thing I do is an addition - a little trick from my favorite Tortilla Soup recipe.  I add a little A1 Steak Sauce and Worstershire Sauce to the soup.  I know what you're thinking - REALLY????? - because I thought the same thing.  But something about this little addition really kicks up the flavor factor of the soup.

When I make this soup on the stove top, I do not pre-cook the rice.  I just throw it in there and allow the soup to simmer until the rice is tender.  It usually takes about 45 minutes for brown rice.  

So if you are having some cold winter days give it a try!  It's delicious and healthy!  So good that it recently won the ribbon for Healthiest Soup at my school's SOUPer Bowl luncheon.
